About five years ago I was diagnosed with celiac disease. Celiac disease is an autoimmune disorder in which your body attacks the villi, or what look like little fingers, in your small intestine that help you absorb nutrients from your food. Because of this autoimmune disorder whenever I eat wheat, barley, or rye, or something that has come in contact with these things, my body attacks these villi, and let's just say that the results are less than optimal. As someone who grew up on a steady diet of pasta, finding out that I could no longer have my favorite food was not easy, but neither was dealing the chronic fatigue, hair loss, skin issues, severe stomach pain, etc. that accompanied my disease. So a lifestyle change had to be made. Through my journey learning to go gluten free, I also learned a lot about nutrition, and am a go to resource for friends and family whenever they are looking to get or stay healthy. I love food - learning about it, cooking it, shopping for it. I also love helping others discover that healthy food can also be tasty. I hope I can be of help to you.
