    (FUll BOOKED TILL October 1 ) I have been cooking professionally for over a decade. Though most of my experience comes from restaurants I have quite a wide varieties of skill sets from baking ( having worked as a bread baker for 2.5 years ), butchery, deserts, Mediterranean/Middle Eastern, Caribbean cuisine and lots more. I have also periodically worked as a personal chef and private caterer for some of the best in the indusrty ( Drake, Alicia Keys, Maroon 5, Swedish House Mafia to name a few) during my career. Baking: 101 flour and gluten development types of grains / flour style fermentation / starters hydration percentage yeast and leavening Baking: 102 quick breads ( biscuits, banana breads, pan breads , etc.) flat breads ( fried breads, pizza, grilled breads, crackers, ect. ) batters ( pancakes, waffles, cakes, cookies, fritters, donuts, etc. ) yeasted breads ( enriched, standard, fat rich, etc. ) freeform / crusty breads ( sourdough, rustic, baguettes ) laminated ( croissant, danish, puff pastry, pie dough ) Cooking: 101 cooking methods, equipment, tools and heat control butchery ( poultry, fish, shell fish, meat, etc. ) stove top cookery ( sauté, pan roast, shallow fry, deep-fry ) vegetable cookery meat, poultry, seafood cookery long cooking methods ( stews, braising, sou vid, curing ) Indian cooking: 101 region, spices, origin history, flavor profile types of curry ( veggie, fish, meat, poultry ) rice types and styles hand breads ( naan, paratha, roti, etc. ) Italian cooking: 101 pasta ( fresh, dry, stuffed, baked ) sauces ( tomato base, cream base, seafood base, meat base ) classic meat, fish, beef dishes grains & rice using Italian principles Middle Eastern cooking hummus and tables spreads ( tahini, mahamara, eggplan, vegetable, ect. ) rice & grains vegetables kebabs and grilled seafood condiments, pickles, cheese, etc. roast lamb, poultry, fish

    Ezra was an excellent teacher and had a thorough and extremely instructive lesson plan. He’s also just a really cool dude. Consider yourself lucky if you get a chance to be taught by him. I would highly recommend it to any level of baker!!

    We had an amazing time with Ezra. He was kind and patient with our eleven year old and the food they made was amazing. We are already discussing when we can invite him back for cooking classes with friends.

    A delightful person with amazing baking skills. His croissants are perfectly buttery and flaky at ththe same time. Plus he does a variety of breads very well, including a sourdough with a homemade starter.
