My name is Massimo, I was born and I spent all my life in Italy since I moved, three year ago in US with my family for a new great adventure. I am so enthusiastic to be able to share with you the knowledge of the language of the greatest poets and writers, knowledge of one of the most beautiful country in the world, rich of history and art, and why not share "in Italian" some of the most terrific recipes for the most refined palate.

The classes in Italian cuisine are tailored to your interests and your skill level. I can teach you how to prepare a "quick win" dinner for all the family or to prepare "single size" amazing meals ready for all the week. I can teach how to make handmade pasta with semolina or with whole wheat. Have you ever tasted a terrific Tiramisu...with strawberries?

How I understand I can be a good Italian tutor,
patient, helpful and always ready to arouse the attention of my students? My youngest son, Vietnamese, is the best proof of my skill. He was able to speak a really good Italian in less than three months. Then I found to be "good" with adults as well. I started to teach Italian to some friends and after to friends of friends .... and it worked again!

Key word? Talk, watch, read, listen and talk again!
I am aware the Italian has one of the most complex grammars, but I also know that speaking and reading and watching Italian movies, soccer game or Television News makes automatic to learn the basic rules useful for a good conversation. We can use a really simple grammar book to support with the basic rules up to more advanced grammar books if we may need.

My tutoring approach is focus on student's weaknesses and strengths: use the seconds to correct the firsts. What it is important is to work on what you really like (movie, politics, receipts, actors, history, vacations, ...) and I promise it works. I already experienced this approach with a lot of students and friends who want to speak Italian and know Italy ...waiting for a great vacation "nel Bel Paese".
I try to be flexible with time and I offer makeup classes in case of 24 hours cancellation. I have an quite full equipped office at home but I am available to travel if it is more convenient for the students.

We had a great time learning from Massimo. You can't learn the proper consistence of pasta dough from a book or video. We will be using all the techniques we learned. The marinara sauce he taught us to make was simple, but delicious. We will definitely call on Massimo again.

I graduated culinary school in 1996 and I have an AS in Culinary Arts and Restaurant management. My mother was a cook for Marriott and some of my fondest memories were spending time in that kitchen with her.

I used to eat take-out every night and generally felt overwhelmed whenever I walked into the kitchen.
I never knew that cooking could be fun until I met Chef Stevie. She's highly skilled, passionate, has a great sense of humor, and her classes are easy to follow. My cooking ability has definitely grown in our two semesters together.

I had a great time as Chef Stevie and the baking lessons. She had an initial conversation to understand my goals and expertise before creating a plan that was suitable for me. I had previous baking experiences but wanted to push myself beyond the basic comfort levels I was used. The lessons were tailored for me. The lessons became more complex as they progressed but Chef Stevie helped me throughout the entire process. Chef Stevie explained what were doing and to have fun in the process. We made some great baked goods including Buttermilk Biscuits, Whoopie Pies, Double Layer Chocolate Cake with Peanut Butter Filling, Lemon Meringue Pie, Apple Blossoms, Chocolate Eclairs, Hawaiian Sweet Rolls, and my new favorite Chocolate Molten Cake. My friends and family really enjoyed the results. They can't wait until I make more. I am glad that I took the lessons and Chef Stevie helped me become a better baker.

After 15 years working in high-tech I had enough of the constant stress, demanding work and long hours scrunched at my desk trying to solve other peoples issues. I wasn't sure what I wanted to do next so I started taking classes in anything that sounded interesting. I took my first cooking class at the local community college and loved the way it made me feel. It wasn't until I took my first baking class in this degree program that I knew I was home. After graduating with a hospitality management degree, I transferred to Johnson and Wales University in Rhode Island to earn a degree in Pastry Arts

My first job was with the Rhode Island Hospital. This hospital had received great recognition for the quality of food the kitchen produced. The director wanted to create a pastry program to expand the selections even more. Thus starte
d my career.

Coming back to the bay area, I wanted a more autonomous position, so I went into business for my self; first with a whole sale bakery which morphed into a catering business. I did this for 12 years, and loved it. All this time I was teaching community baking classes, adult education baking and pastry classes, and teaching part time at Mission College in Santa Clara.

I was then asked by Mission Valley ROP program to create a culinary/pastry program from scratch. It was a real challenge, but I found I really like challenges. From there I went to work for Whole Foods as a Pastry Chef.

After a few years of working for WFM I started teaching at the Art Institute in San Francisco. From there I went to Le Cordon Bleu, Also in San Francisco.

In the middle of all this I got married to a wonderful man.

The Cordon Bleu closed in September of 2016. Which brings me to the present. I am passionate about teaching baking and pastry, and hope to create a program which will allow students to understand baking, not to just follow recipes. My goal is to flame the creativity, and passion in my student, and fuel the desire to keep learning.
